Gold Mountain Carbonic Maceration
Carbonic maceration is a process borrowed from winemaking, wherein coffee cherries are fermented in a closed, oxygen free environment for at least a week. The result is intensely fruity, sweet and juicy. We roast this coffee very light to emphasize the bold fruit flavors while minimizing any hint of "roast" character. This leads to a cup bursting with notes of black cherry, fresh peaches and plums, lychee and honey.
Another offering from our friends at Gold Mountain Coffee Growers in Nicaragua, this coffee comes from multiple of their member farmers who have perfected natural processing. In their words, they hope "this lot will change people's perspectives of the taste of coffee while changing lives in Nicaragua."
